CITRÈNE is the name given by modern chemistry to citrus before it is transformed by fermentation, a name that was forgotten. The theme of CITRÈNE is "aroma transformation through fermentation." The enzymes of white koji gently release the aromas dormant in fruits and spices, and yeast transforms these aromatic components into different expressions. No lactic acid is added. The acid backbone was designed solely with the citric acid brought by white koji and citrus.
