Serves 2 per bag. About 15 minutes in a frying pan.
The sake rice, grown through contract farming between sake breweries and farmers, is not available on the market.
It is a special rice delivered only to the breweries.
This rice, created for sake brewing, has a large starchy core called a "shinpaku," which absorbs soup well and thickens as it is cooked.
If eaten as plain white rice, it would be dry and not tasty.
However, when stir-fried with olive oil, simmered, and finished creamily as a risotto,
its large, satisfying grains and pleasant al dente texture come alive.
The units of rice delivered to sake breweries are fixed, and there are always odd amounts of rice that do not meet these units.
Although it couldn't become sake,
there was a flavor known only to the sake brewer's table.
