Founder CEO

Euka Isawa 
Born in 1993. At 21 she moved to New York on her own and launched the export division of her family’s Katsuyama Brewery, expanding shipments to 25 countries. She is an International Sake Sommelier and has completed Japan’s Technical Executive Course in Sake Brewing. With a background in chemistry, she has started her own company while a student at the University of Tokyo's Faculty of Economics, and later dropped out, developed “MiCURA” the world’s first and only sake home‑brewing‑kit brand, and marketed it globally. Through MiCURA she is a member of the Sake Brewers Association of North America (SBANA), and since 2021 she has lectured on sake brewing at Taiwan’s Chang Gung University. From 2022 to 2023 she co‑hosted the Mainichi Shimbun “Refalover” business‑leader talk series. In her hometown of Sendai she founded Shokagura Co., Ltd. and, in spring 2024, opened SENDAI STATION BREWERY Fermenteria—an innovative urban microbrewery model located inside Sendai Station. Trilingual in Japanese, English, and Chinese, Euka treasures sake as an artwork that lives between human sensibility and science—though she admits she’s very much a lightweight drinker.

Masashige Kai

Manager / Brewer

Second-in-command at Fermenteria, and the trusted right hand of founder Euka Isawa.
Originally from Kitakyushu, he previously served in the Japan Air Self-Defence Force.

A true all-rounder, he seamlessly takes on everything from business strategy and sales to hands-on brewing. He’s also our “ambassador” to the world—building friendships across borders and genres.

His greatest strength lies in his ability to think and act independently. His mental toughness and determination to follow through make him an essential pillar of the team. “Mission Impossible” is not in his vocabulary.

Meika Kobayashi

Brewer / Front-of-House Star

She’s the backbone of Fermenteria. Originally joining the team as a sales assistant, she quickly surpassed expectations with her dedication and growth—developing brewing skills that now place her at the heart of our product development team.

She’s also our front-of-house star, managing daily operations and welcoming customers with warmth and confidence. Known for her outstanding communication skills, she’s deeply trusted by both customers and team members.

Even in the face of difficult challenges, she’s the first to step up and take action, making her a driving force within the team. Her gentle smile hides a surprising level of stamina and grit that impresses everyone around her.

Kyosuke Sato

Planning & Customer Relations / Brewer
The backstage ace of Fermenteria. With a bottomless bag of tricks and lightning-fast instincts, he’s helped us power through every challenge that’s come our way.

While also running his own craft beer shop, he brings a unique dual perspective...he’s the reason behind Fermenteria’s beery side. With a knack for shifting perspectives, he also serves as a trusted strategist, unafraid to speak frankly to our founder, Euka Isawa.

Even when handed impossible requests or dropped into chaotic situations, he may grumble, but he never walks away. He always sticks with the team and keeps looking forward with a problem-solving mindset.

No matter how intense the schedule, he somehow finds time to go camping. Honestly, no one’s quite sure when he sleeps.
