Fermenteria — The Neighborhood Fermentation Atelier
Our name fuses “fermentation” with the Latin shop‑suffix “‑eria,” literally “place of fermentation,” reflecting our vision to unite biological marvels and human creativity.
Concept

1.Bringing the Enchantment of Once-Lost Sake Culture: BRINGING YOU THE ELUSIVE TASTE OF TRUE FRESHLY BREWED SAKE
In modern times, as sake brewing has become commercialised and separated from people's lives due to institutional regulations, the true experience of freshly-made sake straight from the tank has become a rare treat, usually only available to brewery insiders. At Fermenteria, we focus on the value and charm of this 'just-brewed' taste.
In Germany, known for its beer, there is a saying that 'the best beer is found where you can see the brewery's chimney' and 'Don't let the beer travel,' implying that the freshest and tastiest beer is brewed and served on-site. Fermenteria, located in the city, embodies this philosophy, offering the delight of fresh brew.

2.Witnessing the Evolution of Fermentation - Fermenteria's Unique Brewery Design
Our design was the opposite of the usual approach: instead of downsizing a factory-designed sake brewery, we took the approach of expanding the home-brewing process. The basis of our design is the world's first authentic sake homebrewing kit, MiCURA, developed and sold internationally by Euka Isawa. Fermenteria features a wall lined with 30 transparent tanks, allowing guests to closely observe the transformation of rice into sake. Visitors can see the process at various stages, from initial “ricey” state, to bubbling fermentation, up to the finished product.

3.Reviving a Traditional Economic Cycle in a Modern Context
The products brewed at Fermenteria will be sold directly to consumers to take away, as well as to restaurants surrounding the brewery. Our concept involves collaborating with local venues to offer their unique twist on our products, thereby creating value-added opportunities initiated not only by us, the brewers, but also by the providers. We aim to establish a new economic cycle where the product is made, valued, and consumed all in one place, visible to everyone involved.
In a world where logistics makes obtaining goods easier than ever, the value of unique, location-specific experiences is increasing. By adopting transparent tanks that showcase the rice-to-sake transformation and offering freshly made products daily, we leverage our prime location at Sendai Station. With the opening of SENDAI STATION BREWERY Fermenteria, we aim to attract visitors from both within Japan and abroad, contributing to the further revitalisation of Sendai as the gateway to the Tohoku region.
