■ About CITRÈNE
CITRÈNE is the name given by modern chemistry to citrus before it undergoes fermentation, a name that was forgotten. The theme of CITRÈNE is "aroma transformation through fermentation." The enzymes of white koji gently release the aromas hidden within fruits and spices, and yeast transforms these aromatic components into different expressions. No lactic acid is added. The acidic framework is designed solely with citric acid derived from white koji and citrus.
This bottle contains natural bubbles created by fermentation. Upon opening, a sharp citrus aroma bursts forth, and as the carbonation subsides over time, a floral and deep aroma quietly comes to the forefront.
